why change pin weight

I typically used the clickers to adjust my max rpm, what is the use or difference in performance in using pin weight instead? probably a dumb a question

In a nutshell, you do something to your engine to make it go faster. That means your sled pulls more RPM, you add weight to bring the revs back down into the power band. BY adding weight you are loading your engine harder and gaining in acceleration.

isn't that why you use your clickers and can adjust by 200 rpms accordingly
Clickers are the easy way to adjust max rpm...it's kind of "cheating" though, as there are side effects, ie. how straight the shift is. It has to do with the profile of the ramp being used as well as other factors...Dynamo Joe has a section on "Tuning For a Straight Shift" here, worth a look.
