Two Wheels or Four?

What is the benefit of a two wheel set up in the back?

2 wheels in the center alone, allows the track to flex more on the outside edge.Easier for sidehilling and carving.Just my opinion.
is there any drawbacks with only two rear wheels on the inside?

From what I have read here its harder on your hyfax in low snow conditions.
2 wheels on the inside of the rails allows the sled to sidehill better.
I have five 1 1/4" holes in my track, I have heard that that makes them more flexible for side hilling.

Is it possible to be so flexible that the track rubs with the wheels in the middle and a hole in the outside of the track?

If one breaks you only have one left and that's one to few. Better have a spare close by on one in you pack. I've only got two in the center and none other, my hyfax lasted all season and I only occasionally had to use my scratchers.

Two are fine as long as you have the tools and ability to change one out on the trail if one breaks.

The advantage I find with deleting all but the two rear center wheels is - less weight, less rolling resistance and less stuff to catch and hold snow inside my skid frame. If you don't live in an area where there's always fresh snow - don't do it.
I had two billet wheels all last winter and didn't have any problems. Jumped, boondocked, climbed, crashed, ect. and never broke one. I only did it because I wanted some bling and two is cheaper than four.

I have been running mountain machines 2 inside wheel setup for one and half seasons on a 151 track with 3- 1 and1/8 holes and never had a problem. As for side hilling easier I don't think so. How can a track bend when fiberglass rods are running through it every 2.52''. Sidehilling is all about weight and balance. Like Nikolai said 2 wheels are for bling only.
