I have a 2001 Triton trailer - XT10-101 and am looking for advise on deck replacement. The current plywood is 1/2" thick and I'm thinking of changing it to 3/4" thick. The plywood slides into a track on both sides and I will need to shave the plywood down on the edge to make this happen. I believe the 3/4" plywood will hold screws better for the ski guides/track grips. Looking for input on doing this. Either way, I will be using marine grade plywood and have access to both sizes.

Just like Don, I'd stay with the 1/2 inch also.
As for the grip of screws holding down the track mat & ski guides you can use screws with a larger shank.
I feel your biggest difficulty will removing the factory screws holding the ply to the frame....... you most likely have to rip the plywood up and grind the screws flush.

Good to hear you are staying with 1/2 inch marine plywood. That is what I used when I put a new deck on my 95 triton two seasons ago. I also painted both sides of the plywood with outdoor deck paint before I put it on. It will just help it hold up that much longer. I put Caliber ski guides and track grips on. There is plenty of wood and the screws did not go through the back side of the plywood.
